Monday night I made mango chicken in my little glazed clay pot.
1 sliced chicken breast; 1/2 thinly sliced large yellow onion; 1 sliced mango; 1 inch cube skinned julienned ginger.
Marinated the chicken in brown sugar, LKK “chicken marinade,” and a bit of thai fish sauce. Sauteed onions first then added chicken, ginger, and mango (in that order, I think). Dumped into clay pot, covered with lid and baked in oven for about 15 minutes in the oven. I liked it 😀 The flavors that really came out though, were the sugar and ginger and mango. Mango wasn’t really fully ripened so it was a bit tart.
Marinated some more chicken breast today with hoisin sauce, brown sugar, and fish sauce.
